Libations and Retail

We strive to make perry and cider that expresses the best qualities of the Asian and European pears and heirloom apples that we grow and source. We carefully control fermentation to preserve some of the natural sweetness, use 100% juice pressed at our winery, and do not add sugar or flavorings. Yes, we are purists.

Airlies Redflesh Cider

Single varietal, organically grown Airlies Red apples by Luckiamute River Farm in King’s Valley, Oregon.  Discovered in 1960 as an indigenous seedling, the yellow green skin conceals a beautiful rose colored flesh, producing an amazing red-colored juice. Bright acidity and minerality with notes or red berries. Fermented to dryness, cold and slow. ABV: 7.6%

Non Alcoholic D’Anjou Perry

Made with 100% organically grown D'Anjou Pears from our orchard at Sakura Ridge in Hood River, Oregon. Lightly sparkling with medium body and sweetness. Earthy with subtle notes of pear skin. No sugar added.

Non Alcoholic Korean Giant Perry

Hand-crafted from Korean Giant Pears. This slightly sparkling beverage is pleasantly sweet from the ripe asian pears. No sugar added. Pairs well with spicy foods, herbs, and sharp cheeses.

4-Year Royal Cider

Aged for 4 years in French oak barrels, this cider is fortified with apple brandy that was made using our ciders. Slightly spiritous with a cordial like body and cherry notes, the apples shine through for this delightful sipper. ABV 18.5%

Forager Perry (Club Only)

From the 2021 harvest these seeding pears were foraged from a single (secret) site on Vashon. Aged an extra year in stainless steel to “tame” the tannins, this perry maintains a mild astringency but is a bright and aromatic summer refresher. ABV 6.2%

O’Brien’s Orchard (Club Only)

From one of our go-to orchards for distinctive and high quality apples, this small batch blend consists of Harrison, Kingston Black and Porter’s Perfection. Tasters have described it as juicy but I always find under-lying minerality and crunch from apples grown on this site located at the edge of the shrub steppe north of Prosser Washington. 8.3% ABV

Manchurian Cider (Club Only)

Did we put a +12% ABV cider is a 750ml bottle? Yes we did. Apples the size of cherries may be small but have massive flavor. This is the base cider that we use for our Royal Cider but bottled still, unadulterated, and dry. Boozy and brawny with soft tannins. Cherry Dr Pepper. 12.3% ABV

Sakura Ridge Cider

Finalist: Good Food Awards 2023

Organically grown Newtown and Cox Orange Pippin apples from our Hood River, Oregon orchards. Dry cider with green apple freshness and hints of anise. Medium-bodied with a long finish. ABV: 6.9%

Black Swan Barrel Aged Cider

Aged for 21 months, this cider is a blend of bittersweet and heirloom varietals. The two barrels used for aging were previously used by Copperworks and 3 Magnets for making whiskey and aging stouts. The final product is lightly spiritous with an oaky aroma, and green apple tartness. Medium bodied with a long dry finish. 8.3% ABV

Crimson Gold Cider

A single varietal Crimson Gold cider made from this American crab apple hybrid creates a wine like, strong cider. Tropical and citrusy with hints of melon. Pairs well with fish, fresh herbs, and veggies. ABV: 9.3%

Cab Franz Co-Ferment

Cabernet Sauvignon grape skin pomace, from an esteemed local winery, co-fermented with Northern Spy apple juice. This riff on piquette is bursting with fresh flavors of ripe raspberry at the peak of summer. ABV: 8.6%

Harrison Cider

A rustic blend of organic apples, primarily Harrison from Grandview WA. Light and savory with a slightly smokey finish. ABV: 7.8%.

Chokeberry Perry (Fall 2022 Club Exclusive)

Made from organically grown fruit at our new orchard in Hood River, Oregon. A blend of Anjou Pears and Choke Berries that were co-fermented to create a delightful twist on a classic perry. Choke cherries provide nice tannins that balance the smooth sweetness of the pears. Tea and berry notes combine with ripe pear for a pleasant and unique fall beverage. ABV: 6.7%

Island Harvest Perry

Winner: Bronze Medal, 2016 GLINTCAP

Made from 100% Vashon Island pears and features our estate-grown Shinsseiki and perry pears as well as foraged seedling pears. The bright acidity, effervescence, and residual sweetness make it a great partner for lamb, salmon, and spicy foods. ABV: 6.7%

Hukari Farms Asian Pear Perry

Lightly sparkling with delicate notes of pear skin and a pleasant residual sweetness. Made with Korean Giant pears grown in the Columbia River Gorge. Refreshing with enough bright acidity to pair well with shellfish, light pasta dishes, and salads. ABV: 6.7%

Flora Quince Perry

A co-fermented blend of early season, estate grown Shinseiki Asian Pears, Gravenstein and Chehalis Apples, and Pineapple Quince. Notes of melon and green pear accompany a subtly floral aroma. Light and delicate with soft acidity, medium body, and a fruity finish. ABV 6.9%

Chojuro Perry

Winner: SIP Northwest Best of the Northwest 2018 "Judges Pick" and Bronze Medal, Modern Perry, 2019 GLINTCAP

A blend of Chojuro, Olympic, and Shinko Asian pears. Lively and refreshing, slightly sweet with notes of dried pear skin. ABV: 6.7%

Blanc de Newtown Cider

Winner: Bronze Medal, Dry Heritage Cider, 2019 GLINTCAP

A blend of organically grown Newtown Pippin and Calville Blanc d’Hiver apples. Bright acidity with notes of apricot. ABV: 6.9%

Issho Ni Cider

Winner: Gold Medal, Heritage Cider, 2019 GLINTCAP

A blend of 100% Vashon Island grown apples. Foraged and donated from orchards across the island, this dry cider is very drinkable with notes of stone fruit. Each year a portion of the proceeds go to a local nonprofit. ABV: 6.9%

Idyll Acres Cider

Winner: Best In Class, Traditional Cider, 2019 GLINTCAP

Made with 100% bittersweet apple varieties grown at Idyll Acres Orchard near Salem, Oregon. Fruity aroma of cider apples and phenolics complemented by assertive tannins on the palate. Lightly carbonated and made in a traditional English style. ABV: 8.3%

Hendre Huffcap Perry

Winner: Silver Medal, 2016 GLINTCAP

A vintage perry pear originally from England, Huffcap is fruity with notes of apricot and citrus with soft tannins and medium body. Lightly sparkling with good acidity. 

Wax Orchard Estate Perry

A blend of early-season Asian and European pears co-fermented with Evereste crabapples exclusively from our Wax Orchard location. Strong pear aromas, rich mouthfeel, and a tropical fruit finish are highlights of this very limited release. ABV: 6.9%

Hosui Asian Pear Perry

Organically grown Hosui and Ichiban nashi were cryo-concentrated prior to fermentation to boost acidity. English perry pears were blended for tannins and complexity. Wine-like with flavors of pear and baked apple. Balanced, slightly sweet, with a pleasantly long, dry finish. Available in 4-packs and 750 ml bottles. ABV: 6.9%

Newtown Pippin Cider

Single varietal Newtown Pippin apples from Hood River. Bright and refreshing with notes of green apple. Extra dry, yet slightly fruity and balanced. Served still, adding to the white wine like quality. ABV: 6.8%

Newtown Mac Cider

Fresh juice from Macintosh apples is blended with a single varietal Newtown Pippin Cider. Bright and refreshing with notes of green apple. Medium dry with a full, fruity aroma. ABV: 7.5%

Royal Cider

Port-style cider made with 100% Manchurian crabapple cider fortified with eau de vie and aged in French oak for 18 months. Flavors of dried apple, figs, and almonds with solid acidity make this a favorite winter warmer. Only 60 gallons produced. Available in 375 ml bottles at the orchard. ABV: 19.5%

Hooded Man Cider

Manchurian crabapple cider aged for 18 months in stainless prior to blending. 40% Hood River, OR, blend of Newtown Pippin, Jonagold, and Lady apples were added for aromatics and mid-palate complexity. Citrus skin nose with pleasant funk leads to red fruit flavors and a long, baked-apple finish. Assertive tannins and brisk acidity provide structure and bite.

White Hart Gin Barrel Aged Cider

Cider is a blend of 50% Golden Russet, 30% Ashmead’s Kernel and 20% mixed aromatic apples. Aged in “Big Gin” barrels for 5 months. Notes of juniper, pine, and peppercorn. Dry. ABV: 8.3%

New Foo Draft Cider

Single varietal, organically grown Newtown Pippin apples, finished with Macintosh juice.  These are the last known produced apples from Tomiasu Orchard in Hood River. A sweet, tart, and fruity cider perfect for warmer weather.  Off-Dry. Available in growlers or by the glass. ABV: 6.3%

Flora Perry

A blend of Hosui Asian pear, Jonathan apples, and Smyrna quince. A note to the appelwine of Germany and sidra of Spain.  Rustic and aromatic with pleasant lingering tannins. ABV: 6.6%

Black Swan Cider (2020 version)

Heirloom apple cider aged in Woodinville Whiskey Rye barrels for 6 months. Apple forward and semisweet with notes of vanilla, oak, and grains. Growlers available for onsite fills. ABV: 8.3%

Royal Perry

Fortified Bartlett pear perry aged in French oak since August 2016. Summery and sweetly refreshing with pear and tropical fruit flavors and notes of vanilla. Enjoy over an ice cube or in your favorite cocktail. ABV: 16.2%

Black Ice

Freeze concentrated Oregon grown heritage apples blended with bittersweet cider varietites and aged in Copperworks shiskey barrels. Naturally sweet and a great accompaniment with dessert. ABV: 15.0%

Taylor’s Gold Perry

This russetted heirloom pear underwent an extended maceration and fermentation on the skins to create a medium-sweet perry. Organically grown in Sedro Woolley, WA. Very juicy with a solid backbone of acidity and notes of baking spices. Available in 375 ml bottles at the orchard. ABV: 6.6%

Imamura Aki Asian Pear Perry

This late-season heirloom pear produces a balanced and fruity perry with flavors of pear and melon. The addition of traditional English perry pears provides structure and richness. Available in 200 ml bottles and 4-packs at the orchard and at our retail partners. ABV: 6.7%
